Khasta Gajak

Sindhi khasta gajak is a flaky, crispy sweet made primarily from roasted sesame seeds (til), jaggery or sugar syrup, ghee, and spices like cardamom and ginger for added flavor. The sesame seeds are toasted until aromatic and golden, then mixed into a hot, bubbling jaggery syrup cooked to a hard-crack stage, ensuring the signature khasta (flaky) texture upon cooling. Ghee is incorporated for richness and crispiness, while spices provide a subtle warmth that complements the nutty sesame base.
